蜜桃桂花菓醤/冰红茶-yellow peach and osmanthus jam/iced tea

蜜桃一般只有夏天才上市。黄蜜桃又比白蜜桃帶酸。一般很少直接吃,只會用來作拌菜或菓醤等。這個蜜桃菓醤加了桂花,冬天可以用來做菓醬,夏天可以用來做冰紅茶。一物二用。

Peach season is in summer.  Yellow peach often taste sour compares to white peach.  Often use it in salad or jam rather than as fruit.  This peach jam I have put in osmanthus.  You can use it as jam in winter and as put in Ceylon tea to make peach and osmanthus flavour iced tea.

材料:
650g 黃蜜桃(去皮去核量- 原菓約750g)
80g 原糖
80g 黑糖
90g 砂糖
2 湯匙 乾桂花

Ingredients :
659g yellow peach(peeled and stones removed- untreated fruit approximately 750g)
80g raw sugar
80g brown sugar
90g white sugar
2 tablespoon dry osmanthus flower

做法:
1)把去皮去核的黃蜜桃切成4份。把糖和桃放入厚低煱,用中火煮至糖完全溶解。其間不断攪拌。
1) after removed the skin and stones, quartered the peach and add all the sugar into a thick base saucepan.  Use medium heat until all sugar is melted. Stir constantly during this time.


2) 5 分钟後,糖開始燒滾,轉至最小火不要蓋上煱蓋。每隔10分钟攪拌一下以旁沾底。
2) after 5 minutes,sugar started to boil. Turn heat to the lowest to simmer uncovered.  Stir a little every 10 minutes to prevent it from sticking to the pan.

3)30分钟後,蜜桃開始輭化。
3)after 30 minutes, peach starting to soften.

4)準備消毒瓶子。把熱水放進煱中,把玻璃瓶子及蓋放蒸架上隔水蒸15分钟或以上。保温至用時才取出。
4) prepare to sterilize glass jar.  Put glass jar and lid onto a rack inside a large saucepan filled with hot water.  Steam it for at least 15 minutes until ready to use.

5)蜜桃醬煮至45分钟,下乾桂花。
5)add osmanthus after 45 minutes cooking of the jam.

6) 拌匀之後再多煮15分钟。此时放一小碟進冰箱。待15分钟之後,把一小滴菓醬滴在冰凍的小碟上,把小碟直放,如菓醬不滴下即成。
6)mixed well and cook for further 15 minutes.  At this point, put a little saucer into the freezer.  Once the 15 minutes cooking time is up, take the cold saucer out and drop a drop of jam onto the saucer and place it vertically.  If the jam do not run down, the. Jam is done.

7)從煱中取出消毒後的玻璃瓶和蓋。把熱的菓酱馬上裝入熱瓶子裏然後蓋上蓋。把瓶子倒轉静置至完全冷却。
7)take the hot sterilsed jar and lid out from the saucepan. Pour the bit jam into the hot jar and put the lid on tightly.  Reverse the jam jar and let it cool until it cool down completely.

8) 用菓醬來做冰紅茶,用紅茶750ml, 3 湯匙菓酱和適量冰,攪匀即成。
8)to make ice tea, mixed 750ml black tea, 3 tablespoon jam and some ice and mixed it well and serve.
