葡撻[食譜] ~ Pastéis de Nata (Portuguese Egg Tarts) [Recipe]


材料:
Ingredients:
(5 servings)
撻底
Crust

急凍酥皮
Puff Pastry
~100 g
餡料
Custard

Egg (large)
1
鮮忌
Fresh Cream
100 ml
鮮奶
Milk
50 ml
栗粉
Corn Flour
1 tsp
砂糖
Caster Sugar
tbsp

做法:
Directions:
 撻底Make the CRUST ~


(I ‘m using homemade short crust pastry this time)

麵團解凍捍平,切成圓片
放入模內由中心向外按,擴展成下圖,備用
Roll the dough out and cut out circles
Place in a muffin tin, and flatten it evenly against the sides of the tin. Set aside.


餡料Make the CUSTARD ~

將栗粉、糖、雞蛋、忌廉和鮮奶打勻
Mix together the corn flour, egg, milk, cream and sugar.

用中火煮蛋汁。不斷攪拌,至變稠。離火。
Place the mixture over medium heat and cook.
Keep stirring until the mixture thickens.


轉到一個碗裡。蓋上蓋子,放涼。
Remove from heat and transfer the custard to a bowl.
Cover and let cool.


Assemble and bake the pastries ~

倒入蛋漿8成滿
Fill each cup 3/4 full with the custard


入已預熱180 C焗爐焗 30-3分鐘 或至表面金黃色,即成
Bake in preheated 180 C oven for 30 to 35 minutes until the egg mixture is set.
