低溫南乳烧雞 low temperature roast roast chicken with red fermentedbean curd

之前做羊肉買了南乳,想起了南乳吊燒雞,所以今天做了低温焼雞。焗到最後半小時,整個厨房都是南乳的獨特香味。做了幾次低溫焼,越來越得心應手。

材料:
1.5kg 走雞
2 磗 南乳
2 粒 蒜蓉
1/2 茶匙 海鹽
2 茶匙 糖
2 湯匙 玫瑰露
2 湯匙 蜜糖

沾酱:
1磚 南乳
2湯匙 料理酒
1.5 茶匙 糖
半 茶匙 老抽

Ingredients :
1.5 kg free range chicken
2 cubes red fermented bean curd
1/2 tsp sea salt
2 gloves garlic finely chopped
2 tsp sugar
2 Tbsp Chinese dry sherry

Dipping sauce
1 cube  red fermented bean curd
2 tbsp cooking wine
1.5 tsp sugar
1/2 tsp dark soy sauce


做法:
用玫瑰露塗匀清潔及抹干後的雞身及內腔。放入保鲜袋然復放入雪柜2小時。

Method :
Rub Chinese wine on the skin and cavity of a cleaned dried chicken and put into a zip lock bag.

把雞從雪柜取出,把南乳,鹽,蒜蓉和和糖攪匀成醬状,均匀塗上雞皮及內腔。放入保鲜袋置雪柜24小時。

Take chicken out from the fridge,. Mixed fermented bean curd, salt, garlic and sugar into a paste.  Rub onto the chicken. Put chicken into zip lock bag and marinate for 24 hours.

烤之前1小时把雞從雪柜取出回室溫,预熱焗炉90c,把雞放在已放烤架的烤盆上,入炉焗2小時,每60分钟反雞一次。然后用温度計量雞肉到65-70c代表雞已熟,愛吃生一点可以用65c,如此類推。2小时後,把雞取出塗上焗盆裏的焼汁。同時把焗調到250c,每面炉10分钟上色,最后塗上蜜糖每面焗3分钟。把燒出肉汁塗上雞脾,再用250c每面取出涼15分钟即成。愛吃少許甜可掃少許蜜糖才上碟。


Remove the chicken from the fridge 1 hour prior to roast time to return the chicken back to room temperature.  Preheat oven to 90c, put chicken in a roasting pan with a shallow rack. Roast chicken for 2 hours. Turned the chicken every 60 minutes twice. (use a meat thermometer to measure if the meat reach 65-70. If you prefer a bit pink is 65c and cook more is 70c). After 2 hours, take chicken out and baste with the sauce in the baking tray. At the same time, turn up the oven to 250c and roast each side for 12 minutes or until prefer browness. Remove from oven and brush it with honey and return to oven for further 3 minutes each side.  If prefer, brush a bit of honey on chicken before serve.

沾醬做法:
用小的打蛋器把南乳打至爛,加入其他材料攪匀。太杰可以加一茶匙水攪匀。

Dipping sauce:
Use a small whisk to mesh the bean curd.  Add the rest of the ingredients and mixed to a paste.  If the paste is too thick, add a teaspoon of water to thin.
