Soft silken tofu with osmanthus syrup 自制鮮豆漿加桂花糖水

1 cup soy bean
5 cup water
2 g cooked edible plaster of paris powder(sell in Chinese herbal shop)
20 g potato starch
Osmanthus syrup as desire 

材料: 
1杯豆黃豆
5杯水
2g熟石膏粉(中藥店有售)
20g地瓜粉
桂花糖䊢適量

Soaked beans overnight and put water and beans in the blender until smooth

Pour all the blended mixture into saucepan and bring it to boil. Simmered for 10-15 mins.  Use a clean muslin cloth to sift all the solid.

Measure soy milk liquid for 1 ltr, return the liquid into saucepan and boil it to 85c.  While boiling the soy milk, mix one tablespoon of water and plaster of paris and potato starch so all powder mixed with water.  place mixture at the bottom of a clean deepish bowl or container.  

When the soy milk reach 85c, pour it in the centre of the bowl so it create a stirring effect.  Do not stir the mixture with another tool.  Cover it in cling wrap and and cool.  

Refrigerate before serve.  ( once the mixture is set, it can be reheat to serve hot)

When serving, pour osmanthus syrup on top as desire.

先把黃豆放清水中浸過夜,然後除去水份,把一杯已浸過隔水黃豆加5杯水在攪拌機中攪爛,把黃豆䊢放爐上煲滾然後関小火煲10-15分鐘。白棉布或芝士布隔去黃豆泎。把豆漿再放爐上煲至85c,同一時間準備熟石膏。把熟石膏粉及地瓜粉加一湯匙水攪勻,置於一個深一點清潔容器,當豆漿煲至85c,把熱豆漿從容器中間倒下,目的是要起攪拌作用(不要再用其他東西攪拌),蓋上保鮮紙靜置至凝固放雪櫃。
